Chicken and Chorizo Chili. Award Winning!

The next thing I had to share on this blog is my chili recipe. Took second place at the Blue Ridge Fire and Ice festival in Georgia. Enjoyed by everyone I share it with, but especially enjoyed by me. This is not exactly a traditional chili; no cumin and the addition of an aromatic herb is not something you will find in most chili recipes. The chorizo and the sage add a rich smoky/musty flavor that is hard not to enjoy. The chipotle and the dried chilis give this some heat. Adjust the spice as necessary to your taste, but even without the spicyness, its a tasty chili that i cant help but make over and over again.

Chicken and Chorizo Chili

A great chili with a wonderfull aroma and a smoky taste

Ingredients

  • 1 can black beans
  • 1 can navy (white) beans
  • can diced tomatoes
  • poblano pepper
  • ½ large sweet onion
  • 1lb boneless/skinless chicken thighs
  • ½ lb chorizo sausage
  • 2 tbs garlic
  • 5-10 dried red chilis
  • ½ tbs chili powder
  • ½ tbs black pepper
  • ½ tbs smoked paprika]
  • .5 oz sage (organic makes a difference here)
  • 1/4 tsp salt
  • 1 cup beer (I use a Belgian white) OR 1 cup vegetable broth

Directions

  1. Set stove to low medium. Place chicken thighs in pan with olive oil to brown. Turn about every 10 minutes.
  2. Puree poblano pepper and onion (using a food processor of some sort)
  3. Grind/Mince chorizo using food processer.
  4. Drain Beans
  5. Add beer (or vegetable broth),beans, garlic, pureed pepper and onion, salt, and full can of tomatoes to pot.
  6. Bring pot to a boil, then set to simmer
  7. Add ¼ tbs of chili powder, black pepper, smoked paprika (we are layering spices here)
  8. Once chicken is fully cooked and browned, chop into (roughly) ½ in cubes and add to pot
  9. Continue to simmer stirring occasionally. Once chicken begins to break up (about 20 min after adding to pot), add chorizo.
  10. Simmer for 10 min, then add Sage. No need to chop, cut, or remove sage from its stems, just press it into the bottom of pot.
  11. Add remaining, pepper, chili powder, and smoked paprika.
  12. Simmer for an additional 10 min.
  13. Serve into bowls with toast, rice, crackers, or tortilla chips.
