
Admittedly, I haven’t googled it, but kudos to whoever invented French toast. You get up in the morning and you want something to eat that is delicious and feels like you made an effort, but is quick, and doesn’t require much effort. Plus, you want the French involved, because who doesn’t like French things? (Probably plenty of people, but we aren’t thinking about them right now). Boom. French Toast. Mission Accomplished. You can make decent French toast in like 5 minutes with just sugar, eggs, and bread and be satisfied, but add 3 minutes to fetch a few spices from the spice rack and a little rum from the liquor cabinet and you are no longer just satisfied, you are truly happy. You have started your day with joy. And why shouldn’t you start your day with joy? This French Toast is a reminder.
Biggest issue with this is the bread. Gotta pick the right bread. People swear by challah. It’s good; sweet, light and airy, but for me, its softness lacks texture. It has no ‘bite’. I prefer a ciabatta, which is just as airy, if not more so, and has a firmness that challah doesn’t. And then there’s just plain square American Toast. Light, super soft, with an even consistency. Hard to complain about, but it’s sliced too thin. Try Texas toast if you want to use this kind of bread for this.
Other Tips:
-Coconut cream is the fatty part of the coconut milk that’s floating on top when you buy it. Some stores just sell this in a can.
-For the ginger, powder is fine, but I’ve also ground this to a paste with some sugar using a mortar and pestle, and had very good results – same amount 1/4 tsp
-I’ve wondered if leaving the egg mix overnight to let the spices settles in would make this better, but I never remember to try this. You should!
-Don’t do this with stale bread! if you buy good bread it just makes the crust really hard, and adds a toughness to the dish you don’t need. Everything soaks up just fine with fresh bread.
-Don’t be shy about the butter. Just don’t be.

A better way to start your day
Ingredients
-6-8 slices of bread, depending on the size and kind you use
-1/2 tsp vanilla extract
-1/4 tsp ground cinnamon
-1/4 tsp ground nutmeg
-1/8 tsp ground cardamon
-1/8 tsp ground cloves
-1/4 tsp ginger powder
-4 tbsp coconut cream
-2 eggs
-1/2 tbsp sugar
-1/2 tsp rum
Directions
- Combine all of the ingredients in a mixing bowl (except the bread).
- Pour this mixture into a small plate, or a shallow bowl (something where it pools and doesn’t just spread out).
- Slice bread into slices about 1 cm thick.
- Soak each slice of bread in egg mix for at least 20 seconds on each side.
- Turn your stove on to low/medium. (On my electric stove its about 3 out of nine).
- Melt a pat of butter (about ½ a tablespoon) in the pan for each slice of bread (not all at once!).
- Cook until a bit browned on each side. Repeat.
- Serve with maple syrup, a little fruit, powdered sugar, whipped cream, or gold flakes or all of these.
- Put on the following song. Right?
