
There are few foods that it is totally acceptable to eat for breakfast, lunch, or dinner. Not pizza, or cold cereal you freaks! But quiche is a savory, light, and elegant (this can be said about food right?) dish that really works as a part of any meal.
So, I tend to make this often, and I tend to make it a variety of ways, adding whatever random things I have in the fridge to it; a vegetable, some meat, an interesting cheese, or the fresh herbs leftover from whatever I cooked last night…but this particular version is one that I have returned to often. With a unique presentation of classic flavors, it tends to impress.
What follows includes a recipe for a savory pie crust. Use of a frozen crust is deserving of corporal punishment! Unless you just don’t have the patience.
Savory Pie Crust
The perfect crust for any quiche
Ingredients
- 2 Cups all purpose flour
- 1/4 teaspoon salt
- 1/4 cup olive oil
- 1/2 cup cold water
Directions
- In a large bowl or food processor mix the flour and salt, add the olive oil, and stir with a fork or pulse to combine to form coarse crumbs.
- Add the cold water about a tablespoon at a time; stirring or pulsing until dough comes together.
- Move dough to a lightly floured flat surface and knead until smooth. Wrap it in plastic and refrigerate one hour before using.
Smoked Salmon and Dill Quiche
A tasty and light quiche for any time of day
Ingredients
- 3 Large eggs
- 1 cup grated Gruyere cheese (gruyere and swiss is nice for a little tartness)
- 6 oz smoked salmon
- 3/4 cup heavy cream
- 1/3 cup sour cream
- 1/4 medium sized onion diced
- 1 clove garlic minced
- 2 1/2 tablespoons chopped fresh! dill
- 1/4 teaspoon black pepper
- salt to taste
- optional 1/4 teaspoon cayenne pepper
- optional 3 tablespoons breadcrumbs to top quiche (breadcrumbs and parmesan is nice)
Directions
- Preheat Oven to 375F
- Combine eggs, heavy cream, and sour cream in large bowl until thoroughly blended
- Add remaining ingredients (cheese, onion, dill, garlic, spices)
- Pour everything into prepared pie crust
- Dust top of quiche with breadcrumbs
- Bake 40 to 50 minutes; until a knife stuck in the center of the quiche comes out dry
- Put MC Hammer’s 90s hit ‘U cant touch This’ on and dance inelegantly around your kitchen until quiche is cooled and ready to serve
